Great for a party treat. I remember making them for one of Caleb’s birthday parties. Maybe his 11th (??). Each child had at least 2 mini pizzas and I was flat out cooking the bases, it was a lot of fun. You could put any kind of toppings on them from tomato-based (like regular pizza) to vegetable stew (e.g.. Caleb’s favourite stew) to fruit with peanut butter, etc., etc. The original recipe for the bases comes from a recipe for communion bread which was intended for baking in an oven. However, before we had an oven, we needed to make communion bread, and found that the same mixture of dough could be rolled into Indian flat-bread rounds and so now we make communion bread this way. However, for a special treat, it can be made on other days too.
For the bases you will need:
1 cup flour
¼ tsp. salt
¼ cup oil (you can use less)
Water to make a dough.
Method:
Rub oil into the flour and salt.
Gradually add water – little at a time as you work the dough into a ball.
Divide dough into pieces and roll out thinly.
Cook on a heated heavy based frying pan or wok (no oil).
Turn often until dry and cooked.
Spread on toppings of your choice e.g.. Fresh or cooked fruit or veggies, stews, fruit jams, etc.
