ES 4. Spaghetti Sauce


I’m not Italian, nor do I propose to have some magical spaghetti sauce recipe! However, after eating rice with various “soups” or “sauces”, most volunteers seem to think that spaghetti and tomato-based sauce is Heavenly!
It always varies from time to time, depending on availability of ingredients, so will list the main options here.

You will need:
Onions
Garlic (fresh is best!)
Capsicum
Eggplant
Carrot – just a little.
Tomatoes – we use fresh.
Tomato paste or puree.
Fresh and/or dried basil and/or Italian herbs.


Method:
Finely chop the veggies and sauté together. Add the paste/puree.
Add a protein if you wish e.g.. Gluten mince, cooked black eye beans, red lentils, tofu or tofu burger mixture made into “meatballs” etc.
Add herbs and salt to taste.
Simmer for quite a while, at least ½ hour.
Serve with spaghetti strands with a spoon of white sauce on top for a really delicious meal.
